This deer burrito recipe is simple and can serve a family of four to six and you may even have some leftovers to pack in your lunch box so you can boast about your wild game meal to your co-workers that are eating take-out for lunch with meat from who knows where.
Deeritos - Preparation time 15
Minutes, Cook Time 20 to 30 Minutes (depending on your preferred Simmer Time
Ingredients:
1/2 lbs Deer Shoulder Chopped into
pieces smaller than 1/2" cubes.
12 Oz. Black Beans
Spanish Style Yellow Rice
1 Package of Taco Seasoning
1 Diced Roma Tomato
1 Sliced or Cubed Avocado
Sour Cream
Lime Wedge
Large Tortilla Wraps
Olive Oil or Avocado Oil
Some of your Favorite Salsa (Fire
Roasted Salsa for Me!)
Cheese if you wish (I use a pepper
jack)
The Deer Meat - 20 – 30 Minutes
After chopping up the deer shoulder
into small pieces, brown it in your choice of oil, I use olive or avocado oil.
Once the deer meat has been browned, cover it with water and add half a package
of your taco seasoning (3-4 tablespoons if you are mixing your own), mix it up,
bring the liquid to a near boil and then simmer without a lid so the seasoning
reduces down and is concentrated around the deer meat. Let it simmer while the rice it cooking.
The Rice – 20 – 30 Minutes
Use a pre-packaged Spanish style rice or make your own. It is your choice depending on your time and culinary
choice. I add a tablespoon or two of the
taco seasoning to my rice for additional flavor.
The Beans – 10 Minutes or all night!
If you are starting from dry beans, soak those suckers
overnight to make them more “user-friendly”. If you get your beans from a can
then this is a short preparation.
Drain your soaked or canned beans and rinse them. Place then in a sauce pan with some water and
use the remaining of your taco seasoning pack or about 3-4 tablespoons. Bring the liquid to a boil and then simmer
for 10 minutes.
Assembly
Once the Rice is ready, assembly may commence.
Place one or two large tortillas wraps on a plate and spoon
in your desired amount of rice, beans and deer meat. Top this with the tomato, avocado, sour cream,
salsa and cheese (add or subtract these as you wish)
Keep your amounts in check or you will have a “Deerito” so large
you can’t fit it into your mouth.
Wrap it tight and have a plate as a safety net
for goodies that cannot be contained and enjoy.
